Red Cabbage Soup

Why purple soup? Because its color change is sure to brighten up everyone’s day!

Ingredients:

  • 1 Red Cabbage 
  • 100gr Potatoes 
  • Water or veg Broth (top it the pan)
  • 2 Chopped Scallion
  • 2 tsp Olive oil
  • Lemon Juice (decoration)
  • Salt
  • Nutmeg, adjust to taste

Instructions: 

  • Start with olive oil, chopped scallion, then chopped cabbage, and potato.
  • Fix the flavor with salt and nutmeg.
  • Add the broth or the hot water and cook for 15-20 mins.
  • then with the help of the hand blender blend everything together.
  • To decorate spritz the lemon juice in a circular motion, the acidity will turn the color into a brighter purple.
  • Then top it with some cabbage.

Broccoli Soup

This is a great soup for when you’re sick!

Ingredients: 

  • 500gr Broccoli 
  • 100gr Potatoes
  • Water or veg Broth (top it the pan)
  • ½ Chopped Leek
  • 2 tsp Olive oil
  • Pepper, adjust to taste
  • Salt
  • Roasted seeds, for garnishing

Instructions: 

  • In a pot add olive oil and the chopped leek to cook over medium heat.
  • Once the leek has softened up, add broccoli and potatoes.
  • Add salt and pepper and let it simmer for 15-20 min and blend into soup texture.
  • Drizzle some olive oil and top it up with some dried seeds.

Pumpkin Soup Recipe

Pumpkin soup is a perfect soup recipe for the fall months.

Ingredients: 

  • 500gr Pumpkin 
  • 100gr Potatoes 
  • Water or veg Broth (top it the pan)
  • 1 Chopped large Onion 
  • 2 tsp Olive oil 
  • Salt
  • Pepper

Instructions:

  • Start by removing the skin of the pumpkin, then chop it into cubes.
  • Then chop the potatoes and onion as well.  
  • In a pot drizzle some olive oil and toss the chopped onions in 
  • Place over medium heat and cook for 10 mins until the onions have softened. 
  • Now add the chopped potato and pumpkin. 
  • then salt and a pinch of pepper, before adding some water or vegetable broth.
  • Leave it to simmer over medium heat for about 20/30min until all the veggies are fully cooked through.
  • Then use a hand blender to make them into a creamy gourmet texture.
  • Serve with a drizzle of olive oil and a mix of pumpkin and chia seeds, sage, and thyme.
