Easy Christmas Breakfast Ideas for a Lazy Morning

So if you’re looking for ideas for Christmas brunch to make your holidays even more bright and merry, check out our recipe for this cream cheese panettone roll.

Ingredients:

  • 1 Panettone (leftovers)
  • 5 tsp Heavy whipped Cream
  • 10 oz (300gr) Cream Cheese (or mascarpone)
  • 3 tsp (50gr) Sugar
  • 2/3 tsp Dark chocolate chips
  • Berries (for garnishing)
  • Fresh mint (for garnishing)
  • Powdered sugar (for garnishing)

Materials:

Instructions for Panettone

  1. First, we need to cut our panettone into 1 cm thick slices. If you have a full panettone, you can cut it in half and then into vertical slices. Cutting the panettone in half first allows you to easily remove the paper protection around the bread. If you only have leftover panettone, simply cut 1 cm thick slices of what is remaining.
  2. Cover your bamboo placemat with a layer of plastic wrap.
  3. Place your panettone slices on top of the plastic wrap (if you are using end pieces, place them crust-side down). Make sure the corners of the slices overlap each other by about 1 cm. This is crucial to guarantee that your panettone breakfast comes out in the right shapes.

4. Take your kitchen roller and press down on the slices. We want them to be thin and pressed together.

5. Now, we will take our knife and cut around the edge of the entire crust until we have a uniform rectangle shape. This will give us a nice, even shape to our roll.

Instructions for Frosting

6. The best Christmas breakfast ideas involve a deliciously creamy frosting, so that’s what we will make next. In a bowl, add your mascarpone or cream cheese along with the heavy whipping cream.

7. Blend the two ingredients together with a hand mixer until creamy.

8. Now, add the sugar to the bowl and continue to blend. If the mixture is too thick, feel free to add more heavy whipping cream to thin it out.

9. Add the chocolate chips and blend.

10. With a spatula, scoop out a bit of the filling and spread it across the panettone. Continue adding more of the filling until you have a smooth layer (leave about 1 cm around the edges of the panettone).

Instructions for Rolling

11. To make the roll, slowly fold over the bamboo placement on one side. Tightly roll the dessert, gently pressing the bamboo placement as you fold it towards the other end.

12. Remove the bamboo placement but keep the roll sealed in the plastic wrap.

13. Place the roll in the fridge for 2 hours to let it harden.

14. Once you’re ready to serve, cut the roll into thick slices. Leave the plastic wrap on while you cut. After it is cut, you can then remove the plastic wrap.

15. Place the slices on a serving platter and dust with powdered sugar. Add a side of berries and fresh mint for garnish and serve! Wasn‘t that one of the easiest ideas for Christmas brunch?
