-Dark chocolate chips or pieces

For this delicious parfait, you’ll begin by loosely grinding your cookies in a food processor. Set them to the side while you melt the dark chocolate over a bain-marie.

-⅓ cup plus 1 tablespoon of water

-Cocoa powder

-hazelnuts

For this parfait, you’ll make whipped coffee and chocolate mousse to layer together. You’ll begin by preparing the chocolate mousse first. To do this, melt the chocolate over a bain-marie. Once it has melted, let it cool in the fridge for 30 minutes.

Then, whisk the chocolate with ⅓ cup and 1 tablespoon of water until it reaches a thick consistency. Return the mixture to the fridge to cool again. In the meantime, you’re going to make your whipped coffee. In a bowl, combine the instant coffee, sugar, and hot water and whisk together until firm.

Then, crush your chocolate cookies in a food processor. Now you’re ready to make your parfait! Layer the parfait in the following order: whipped coffee, cookies, granola (optional), and chocolate mousse.
