1. Garlic Roasted Chicken

  • 1 whole chicken, butterflied, quartered
  • 4 garlic cloves, crushed
  • Juice of 2 lemons, plus lemon wedges to serve
  • 500g Brussels sprouts, finely shredded
  • ¼ cup (60ml) extra virgin olive oil
  • ½ small savoy cabbage, finely shredded
  • ½ tsp wholegrain mustard

Instructions:

  1. Preheat your oven to 450 degrees.
  2. Place chicken skin-side down in a cast-iron skillet or baking dish and add garlic, half the lemon juice, and 1 tbsp oil.
  3. Combine sprouts and cabbage. Then, whisk together mustard and remaining lemon juice, and 2 tbsps oil. Season and toss with vegetables. Line a baking sheet with marinated vegetables.
  4. Cook chicken for about 60 minutes or until cooked through. At the halfway point, put Brussels in the oven to cook for 20 to 25 minutes. Then serve all together.

2. Drunk Rib Eye Steak

Ingredients:

  • 1 cup (250ml) water
  • 1/2 cup (125ml) soy sauce
  • 1/4 cup (50g) brown sugar
  • 2/3 cup (165ml) bourbon whiskey
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons lemon juice
  • 4 (185g) ribeye steaks

Instructions:

  1. Whisk together your water, bourbon whiskey, soy sauce, brown sugar, Worcestershire sauce, and lemon juice in a small bowl. Add the ribeye steaks to a dish and begin to coat it with the marinade. Once saturated, cover with plastic wrap. Marinate in the refrigerator for 8 hours or overnight.
  2. Preheat a grill to high heat. Be sure to lightly oil the grate.
  3. Remove the ribeye steaks from the marinade, shaking off the excess. Discard the remaining marinade.
  4. Heat the steaks on high for 1 to 2 minutes per side to sear the meat on the grill. Move the steaks to a cooler part of the grill and cook for an additional 2 to 3 minutes per side.
  5. Serve with your choice of sides.

3. Creamy Shrimp Pasta

  • 3/4 lb fettuccine pasta
  • 1 tbsps olive oil
  • 1/2 onion (medium), finely chopped
  • 1 lb large raw shrimp peeled and deveined (21-25 ct)
  • 1 garlic clove minced
  • 2 tbsp unsalted butter
  • 1/3 cup white wine
  • 2 cups whipping cream
  • 1/3 cup shredded parmesan cheese
  • 1/2 tsp sea salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1/4 tsp paprika or to taste

Instructions:

  1. Add pasta to a pot of boiling water with 1 tbsp salt and cook according to package instructions. Drain without rinsing and set aside.
  2. While the pasta is cooking, prepare the shrimp and sauce. Season shrimp with sea salt, black pepper, and paprika. Place a large, non-stick pan over medium/high heat and add olive oil. Once the oil is hot, add shrimp in a single layer and cook for 2 minutes per side or just until cooked through and no longer translucent. Remove to a separate dish to prevent overcooking.
  3. In the same pan, add butter with finely chopped onion and sauté until soft and golden (3-5 minutes), stirring often. Add minced garlic and sauté for another minute until fragrant. Stir in white wine and boil down.
  4. Stir in cream, bringing to a light boil then simmer for 2 minutes. Sprinkle sauce with parmesan cheese and stir just until creamy and smooth. Let it come to a simmer without boiling then turn off the heat and season the sauce with more salt, pepper, and paprika to taste.
  5. Stir in the drained pasta and cooked shrimp, tossing until noodles are well coated in sauce. Serve with more parmesan cheese and some freshly cracked black pepper.

4. Black-Eyed Peas

Most families have some kind of black-eyed pea tradition as it’s supposed to bring good luck to your future! But what if you take the old traditional recipe and make it new?

  1. Heat olive oil in a pan. Then add onion, carrot, and minced garlic.
  2. Add the drained black-eyed peas, ham hocks, chicken stock, and bay leaves. Then bring it to a boil. Reduce the heat and cover. Cook until the beans are tender (about 1 1/2 hours).
  3. While that is simmering, put the baguette slices in the oven (pre-heated at 350 degrees). Be sure to brush some olive oil on them before putting them in the oven.
  4. Once the black-eyed peas are done, drain them, setting aside the ham and bay leaves as you won’t be needing them anymore. Then, scoop peas onto the crispy baguette pieces and grate Parmigiano-Reggiano cheese over them.
